It's Apple - Shift keys, not option.

"Apple Shift 3" grabs all screens

"Apple Shift 4" is selective grabs.

"Apple Shift 4" and then pressing "space" bar key can grab the front most window / menu, or where you click in using the mouse / track pad.

Or you can use Apples' "Grab" application.
