There really isn't any "Right or Wrong", it's all "Trial and Error".
Likely start at 30 fps and see what you get.

Basically adjust the exposure time (or gain - though gain adds noise)
until it's bright enough. Bright enough means the disk of Saturn is
about 30% 60% brightness.

The easiest way to measure the onscreen spot brightness is using
Apples "DigitalColor Meter" (in the Utilities Folder of the
Application Folder"). Put the cursor centered on the disk will
measure the brightness in various ways (%, 0 to 255, hexadecimal or 0
to 65535 ranges).
