The likely issues with USB 3 are:


1) Not enough power on USB 2 port for USB 3 cameras. USB 2 delivers 0.5 amps max, usb 3 delivers 0.9 amps. If you externally power the camera via the GPIO connector that might provide enough power. This is also an issue with the Thunderbolt to FireWire adapter too, especially if your using multiple cameras as Apple is under supplying amperage on FireWire.


2) Not enough bandwidth over USB 2 to deliver a frame before the next frame is sent out. If you ran at much lower frame rates, you might be able to get frames out of the camera. 


3) Apple doing something weird. Quite a few issues with USB showing up on the USB Lists, especially on newer Macs.


As to QuickTime, Apple has officially deprecated it. It likely will be removed completely in the next OS release. Apps submitted to the App Store that link to QuickTime are being refused by Apple. There is no way to deliver uncompressed video (especially 8 or 16 bit formats like Monochrome) under 10.9 or higher and Apple has zero interest in anything except MP4. AVFoundation offers no way to create custom plugins to extend it to accommodate other formats or video, so this is an area Apple doesn't want to support.
